Grammy Ann's Lemon Fluff Cake
1 (3 oz) pkg lemon Jell-o
1 c. boiling water
1 can (13 oz) evaporated milk, CHILLED
1 c. sugar
1 (8 oz) pkg cream cheese, softened
2 t. lemon juice
Rind of 1 lemon, grated (optional)
1/2 c. butter, softened
28 graham cracker squares, crushed
Dissolve gelatin in boiling water. Cool. Whip chilled evaporated milk and add to gelatin. In another bowl, blend sugar and cream cheese. Stir into gelatin mixture. Add lemon juice and grated rind. Mix butter with crushed graham crackers. Press a generous half of crust in bottom of 8x8 pan. Spoon in filling and top with remaining crumbs. Chill 3 hours or overnight.
This is Mark's favorite dessert. Mark describes this dessert as, "Light, refreshing, and delicious!" We got this recipe from Mark's mom, it is said to be a favorite in the home of President Spencer W. Kimball.
