4 cups apples, peeled and diced
1/2 cup white sugar
1/2 tsp. cinnamon
1/4 cup water
Mix together and put in a 9x9 pan. Then add the following:
1/2 cup oatmeal
1/2 cup brown sugar
1/2 cup flour
1/8 tsp. baking powder
1/8 tsp. salt
1/8 tsp. baking soda
1/4 cup butter
Combine these ingredients together to form crumbly topping. Sprinkle over apples. Bake at 350 for 45 minutes. Serve warm with vanilla ice cream.
For a 9x13 pan, use 6 apples and double the topping recipe.
This is my sister-in-law Kristine's yummy recipe. When she emailed me this recipe she put a little note at the bottom, "My favorite part of this recipe is the topping. I usually make 1 ½ times the topping for a 9x9 pan. And I think leftover apple crisp is the yummiest breakfast! Of course, I can’t really get away with this with little ones who watch me carefully… go for it before Emma gets bigger and knows what you’re eating!" We love to make this on a crisp Fall night.
